Shrinking bathing suit & Foodie Friday...




Today is my second Foodie Friday hosted by Designs by Gollum and the theme is Spring. As soon as Spring rolls around I start to look at a few extra rolls that have attached to my middle from my long Winter hibernation. All those nights watching TV, not having the extra sunlight to walk after dinner, have taken a toll on my waistline. Gone are the days of having visions of sugar plums in my head or in my mouth. Now I have visions of putting on last years bathing suit. Can you relate girlfriends? So I gingerly open my closet and try on my bathing suit. Guess what? My bathing suit shrunk. I refuse to buy a bigger size. It is time to eat smaller portions and lower fat foods. I love to grill and found this recipe years ago on allrecipes and have tweaked it to fit my needs. It is quick and easy to prepare. If I stay focused, and cook this tasty recipe once a week, I may get into that teeny tiny bikini by opening day of pool season.*





1/4 cup soy sauce
3 tablespoons dry white wine
2 tablespoons lemon juice
2 tablespoons vegetable oil
3/4 teaspoon dried Italian-style seasoning
1 teaspoon grated fresh ginger root
1 clove garlic, crushed
1/4 teaspoon onion powder
1 pinch ground black pepper
8 skinless, boneless chicken breast halves -
cut into strips


In a large, resealable plastic bag, combine the soy sauce, wine, lemon juice, oil, Italian-style seasoning, ginger, garlic, onion powder, and ground black pepper. Place chicken in the bag. Seal, and let marinate in the refrigerator for at least 3 hours, or overnight.

Preheat an outdoor grill for medium-high heat.

Thread the chicken onto skewers, and set aside. Pour marinade into a small saucepan, and bring to a boil over high heat.

Lightly oil the grill grate. Cook chicken on the prepared grill for approximately 8 minutes per side, basting with the sauce several times. Chicken is done when juices run clear.

I like to add fresh pineapple, onions, mushrooms and peppers onto the skewers for flavor and color.

* note: Did I mention that I am delusional? The last time I wore a teeny bikini was before they invented Twinkies! SMILE!

  2. Sounds like a delicious, healthy recipe. I used to have a neighbor's little girl to follow me around in the garden and she would ask me if I owned a "baking" suit!!!! I guess that describes a swim suit pretty well, huh?

  3. I do love a healthy recipe...I may have to try this one real soon. Love the idea of mixing fruit with grilled foods. Sure sign of great weather.

    I too am trying to lose those extra rolls of fat! I only had a portion of my piece of Mr's cake.
    We are headed out from Utah to VA for our son's graduation from dental school in a few weeks and I can't zip up lots of my clothes. Arrg! So it has been the tread mill for me lately! ;-) Sons are wonderful aren't they?

  12. Sigh, Joyce I finally gave in and bought a bigger bathing suit, with the thought that I can always go back to my older one when I am slimmer. I do need an "in between," right? This looks like a great recipe, and I am adding to my collection right now.

    I really got depressed 3 summers ago when my daughter borrowed my swimsuit because she didn't want to invest in a new one ( her 4th and last pregnancy ) and she was 8 months pregnant ! I never looked back LOL

    BTW,
    My Hubs and I got a 3 month unlimited membership to Weight Watchers recently from our daughter and her Hubs !

Hi Joyce...I'm making the most of the computer working for 5 minutes...I went to lunch with Linda today and we have a wonderful time...I didn't want to go home...We met at her house and I got to meet her lovely husband Richard and her beautiful daughter....we went into downtown Princeton and ate Al Fresco...then walked around a bit and got ice cream...after that we stopped by the coffee house where daughter has her photo's on display...It was just a terrific day...I hope she had as much fun as I did...I brought her homemade Biscotti and when I got there she laughed and we walked into the kitchen where she handed me a bag with what inside.....Biscotti!! all great cooks think alike....

My nice/goddaughter lives in Tyrone,Georgia, she moved there from Jersey also. It seems that I can relate to you on many levels, since I am half Italian.
