Focaccia with Olives and Rosemary...Foodie Friday...

Focaccia With Olives and Rosemary

This is one of favorite Focaccia recipes. It is a big hit with everyone who tastes this and I never have any to take home. They always request a copy of the recipe. I originally made this for my Cooking Light Cooking group. I have to say that the recipe is quick to prepare but you must allow 3 1/2 hours. The dough needs to rise not once but 3 times.

I have made the following changes to this recipe:

I sprinkle a little Kosher/sea salt on the top.
Blend the reosemary and the olives into the dough so that it does not fall off.
Make sure you use ALL the olive oil in this recipe.
Depending upon your oven temperature you may have to bake this 3-4 minutes less.

The recipe can be found HERE at Epicurious.

  22. Hey Joyce! I am so sorry to have missed your Valentine Tea on Friday. :( I'm sure Debbie passed on my frantic message to you when I called her on Monday that my work required that I drive to Charlotte NC for the week to attend some important meetings. I just hated that I couldn't make it to your tea. :( I saw the posts on Cheryl and Sue's blog and I can tell it was a huge success! So fun...I'm hoping the next one is on a Saturday, so much easier for me to commute on the weekends. The company I work for is in transition from a huge merger and it's touch and go right now with my job, so I hate to rock the boat. When they say jump, I say how high...yikes I hate that. But, I'm blessed to have a job, and I'm still awaiting finding out whether I will be offered a displacement package or whether I'll be retained. SOOO, I sure could have used a day with you all on Friday, I guess I'll just have to live vicariously through the posts about the day. :) If you do come up to do the GW near Debbie's, let me know., it's only 10 minutes from my place and I could hopefully catch up with you all. Your scones looked marvelous in Sue's pics from Friday. And, this Foccacia bread looks DIVINE! :) ~CC Catherine

  26. Joyce the Shepardic selection was very good in Pomegranate. We bought meat barekas which were yummy. Kosher meats taste so good! The store might begin shipping items out of state in the future.

  27. I adore a good focaccia but the olives really put this on a whole new level. I would have a hard time staying away from this!
Thank you for visiting my blog and I appreciate your comment. I look forward to visiting yours often.

  28. Hi Joyce, are you looking at going to Disneyworld or Disneyland? We had a great time with the little ones. I guess that's what Disney is all about. We started in Fantasyland first because the lines are always longest there. We took our time and just let the children have the fun. We never went back to the hotel for naps, so be prepared around 5 if you don't do that. They get very tired and nothing seems to work. You didn't mention how long you will be there and that makes a huge difference in what and how to do things, Char
