What's growing on the farm on Hilton Head Island...


 



Small individual plots of land are rented to those who have a love of gardening (click on photo to enlarge). Some people grow vegetables or a combo of vegetables and flowers. There is a tiny farmers market on Saturdays where you can purchase some of these delicious healthy vegetables and colorful flowers when in season.

Notice the Vidalia onions (top left). Vidalia onions are being harvested right now and should be available in your markets. They are sweet and are a southern staple this time of the year. The Peach trees on Hilton Head are starting to produce ripe fruit. The sweetness of Vidalia Onions and peaches is best in recipes that are not overloaded with other ingredients. Please enjoy the following recipe featuring grilled Vidalia onions. It is simple and packs a burst of flavor. Remember to come on by tomorrow for some more Hilton Head island views.

VIDALIA ONION & PEACH SALAD

Ingredients:

* 1 cup baby leaf lettuce
* 1 Vidalia Onion, sliced into 1/2 inch rings
* 1 peach, sliced in half
* 1/4 cup goat cheese, crumbled

For the Dressing:

* 1 teaspoon Dijon mustard
* 1 tablespoon white wine vinegar
* 2 tablespoons olive oil
* Salt and freshly ground black pepper to taste

Instructions

Prepare grill (medium-high heat). Brush sliced Vidalia Onions with olive oil, season with salt and pepper. Grill onion slices and peach until tender, about 4 minutes per side. Thinly slice peaches.

For the dressing, simply whisk together all ingredients in a bowl.

In another large bowl, toss together the salad, freshly grilled sliced peaches and Vidalia Onions. Drizzle with dressing and sprinkle goat cheese on top.

Serve immediately.

  6. We love vidalia onions! I like to sautee them with a bit of brown sugar and butter to smother steaks straight from the grill.

  10. Your salad sounds wonderful; I will definitely try this recipe! Good ole Publix has Vidalia onions on sale this week but fresh peaches haven't made it here yet.

    Enjoy your visit to Hilton Head. We used to take the children there. It was my favorite beach. Pa and I liked to bike ride through the woodsy trails in Sea Pines rather than sit on the beach on a hot July day. We haven't been in several years. I'd like to go back and spend some time in Savannah too.

  12. This salad is not ordinary by any means and sounds delishious!! It is very cool that people can have plots on Hilton Head because it is so important to be safe with grown foods.

    I hope the onions and peaches are somewhat fresh by the time they reach the Midwest!!

  14. I will have to try this one...sounds great! Makes me hungry! Thank you for sharing and your prayers for Romeo! To answer your question, it is not that uncommon to have a herniated umbilical but many times if you do what our vet told us to do which is irritate the site by putting your finger in and out briskly of the hole it will close on it's own. We did that and it just didn't close all the way but did close quite a bit.

  17. Hello Joyce, Yountville is such a small little town but packed with beauty isnt it. We now have a big enough garden and some regular sunshine to allow us to attempt some veggie growing, Hilton head sounds so lovely and your recipe sounds delicious we love V onions and peaches, happy Wednesday, Kathy.

  19. Yum...i think i need to make that!!! Peaches are my all time favorite summertime fruit...we use to have an amazing peach tree growing in our back yard...i went every morning and picked a fresh peach for breakfast....i can still smell them...to die for!!!

  23. Oh my arent you getting to be something else with those neat mosaics! And the recipe sounds yum .. now I need someone to make it for me .. ConEd comes today to inspect and hopefully approve the new gas lines and then we will have the use of our stove back ... wish us luck and an inspector who files his reports promptly
